Cauliflower Chilli is a hearty and flavorful dish that combines the nutty taste of cauliflower with the warmth of chili spices. Here's a recipe for a classic version of the dish:
Ingredients:
1 head of cauliflower, cut into small florets
1 onion, diced
2 cloves of garlic, minced
1 can of diced tomatoes
1 can of kidney beans, drained and rinsed
1 cup of vegetable broth
2 tablespoons of chili powder
1 teaspoon of cumin
Salt and pepper, to taste
Optional toppings: shredded cheese, sour cream, green onions
Instructions:
In a large pot or Dutch oven, heat a tablespoon of oil over medium heat.
Add the onion and garlic and cook until softened, about 5 minutes.
Add the cauliflower florets and cook for another 5 minutes, until they begin to soften.
Stir in the diced tomatoes, kidney beans, vegetable broth, chili powder, cumin, and salt and pepper.
Bring the mixture to a simmer and cook for 20-25 minutes, or until the cauliflower is tender and the chili has thickened.
Taste and adjust seasoning as needed.
Serve hot, topped with shredded cheese, sour cream, and green onions, if desired.
